Spinach and Lentil Soup

The Head Start/Early Head Start program has collaborated with Food for Salud to promote nutrition and wellness for South Florida families by expanding access to healthy foods and educational resources. Together, they support children and caregivers through community outreach.

Packed with plant-based proteins, fiber and essential vitamins, this spinach and lentil soup recipe is a delicious way to support growing bodies and developing immune systems.

Ingredients
Servings: 6

  • 1 1⁄2 cups fresh spinach
  • 2 cups dried lentils
  • 1⁄2 cup chopped yellow onion
  • 1 cup sliced carrots
  • 2 tsp. minced garlic
  • 3 cups vegetable broth
  • 2 tbsp. olive oil
  • 1⁄4 tsp. each cumin, turmeric, pepper

Directions

  1. Sauté onions, garlic, and carrots in olive oil.
  2. Add lentils, broth, and spices.
  3. Simmer until lentils are soft, then stir in spinach until wilted.
  4. Serve warm. Enjoy!
