The Science and Technology Directorate's (S&T) Chemical Security Analysis Center's (CSAC) Chemical Security Lab is measuring organoleptic properties for compounds of concern. The electronic tongue (e-tongue) transforms the organoleptic property of taste into quantifiable signals, analyzing it with robust statistical tools, and delivers objective insights advancing the science of intentional adulteration of foods. Obtaining this capability at CSAC provides a more comprehensive characterization of chemicals for the food defense portfolio.
